Capsicum (Bell Pepper) Rice

This is a very easy recipe and is a whole meal by itself. This will be my entry for the JFI - Bell Peppers event hosted by Creative Pooja . Ingredients: Rice (cooked) - 2 cups Roasted cashews - 2 tbsp Curry leaves - 10 Capsicum (chopped) - 1 cup Groundnut (powdered) - 2 tbsp (optional) Turmeric powder - 1 tsp Oil or Ghee - 2 tbsp Salt - as needed To Powder: Red Chillies - 5 Cinnamon - 1/2 inch Dhania - 2 tsp Jeera - 1/2 tsp Split urad dal - 1/2 tsp Channa dal - 1/2 tsp Shredded coconut - 1/2 cup Seasoning Ingredients: Mustard seeds - 1/2 tsp Split urad dal - 1/2 tsp Channa dal - 1/2 tsp Red Chillies - 2 Method: Dry roast the to powder ingredients. Be careful and do not let the coconut turn black. Let it cool and powder it. Heat oil and add the seasoning ingredients. Molten Chocolate Cake

I love molten chocolate cakes and have been searching for a good recipe for a while. Recently I bought the New Baking Book by Better Homes and Gardens and was happy to find the perfect recipe for the molten chocolate cake. These are baked in individual cups and hence easy to serve. I followed the recipe as is, but served it with whipped cream instead of the recommended Mocha Cream. Next time I will try it with the Mocha Cream. This will be my second entry for the JFI-Chocolate event . Ingredients: Butter - 3/4 cup Semisweet chocolate (chopped) - 6 ounces Eggs - 3 Egg yolks - 3 Powdered sugar (sifted) - 1/3 cup Vanilla - 1.5 tsp All purpose floor - 1/4 cup Unsweetened cocoa powder - 2 tbsp Whipped cream - for garnishing Method: In a heavy saucepan combine butter and chocolate and melt over low heat, stirring continuously. White Chocolate - Cranberry Fudge

Here is my first entry to the JFI-Chocolate event . I've never made a dish for any other event this fast. Now I am sure you guys will accept that I am obsessed with chocolate. My boss usually brings us some treats during the holiday season and last year he brought this fudge. They tasted wonderful and my husband and I liked it a lot. I've been bugging him ever since for the recipe. Unfortunately his wife misplaced the recipe. I decided to Google for the recipe and found the one I liked, here . I omitted the nuts as the one I tasted last year was without the nuts. This tasted exactly like the one my boss brought last year and this year I packed some for him, as a pre-Christmas treat. It is a very easy no bake recipe and takes about 5 minutes to prepare and 2 hours to set. The fudge was chewy and soft and the cranberries complemented the white chocolate perfectly.
